About Lechon Baboy

Lechon Baboy is the undisputed star of Filipino handaan, famously paraded and carved at birthday parties, fiestas, and even in some carinderia special orders. The whole pig is marinated, stuffed, and spit-roasted over charcoal until the skin develops that signature crispy, golden crackle. Most folks enjoy lechon as a main ulam, sliced thick and dipped in liver sauce or sometimes just vinegar, ideally paired with plain rice to cut through the richness. Its taste comes from the blend of garlic, tanglad (lemongrass), and leeks packed into the belly, as well as that consistent basting with its own drippings. Nutritionally, lechon is on the heavier side: a typical 100g serving delivers around 330 calories, mainly from fat (26g per serving) and a solid amount of protein (22g), but almost no carbs. Given its high fat content, it’s best enjoyed in moderate portions—think one small slice rather than piling on, especially if you're having other rich dishes on the side. For a lighter meal, go for mostly lean meat, avoiding excess balat (skin) and fat. Ordering extra vinegar or serving with a green side—like ensaladang talong or atchara—helps balance the heaviness. Enjoying lechon occasionally is grounded in its celebratory roots; it doesn't make for daily ulam health-wise, but it’s part of what a true Filipino fiesta feels like.

Ingredients

  • 1 whole baboy (4-6 kg, cleaned)
  • 3 bundles tanglad (lemongrass), tied in knots
  • 2 heads bawang (garlic), crushed
  • 2 stalks sibuyas dahon (spring onion), chopped
  • 1/4 cup asin (salt)
  • 2 tbsp paminta (black peppercorns)
  • Banana leaves, for stuffing

How to Make

  1. 1Rub the cleaned pig inside and out with salt and pepper.
  2. 2Stuff the belly with lemongrass, garlic, spring onions, and banana leaves.
  3. 3Sew the cavity and skewer the pig on a bamboo pole.
  4. 4Roast over charcoal, turning regularly and basting with its own drippings, for 4-6 hours until skin is crispy.
  5. 5Let rest, then carve and serve with your preferred dipping sauce.
