- 1 whole pork pata (hind leg, about 1.2 - 1.5 kg)
- 8 cups water
- 2 tablespoons asin
- 5 cloves bawang, crushed
- 2 dahon ng laurel
- 1 teaspoon whole paminta
- Cooking oil for deep frying
How to Make
- 1Sa isang malaking kaldero, pakuluan ang pork pata sa asin, bawang, paminta, dahon ng laurel at sapat na tubig hanggang lumambot (about 1-1.5 hours).
- 2Patuyuin ang pinakuluang pata. Mas mabuting palamigin o i-air-dry pa ng ilang oras para lalong mas maging crispy ang balat.
- 3Mainit na mainit na mantika ang gamitin, saka dahan-dahang ilubog ang pata. Iprito hanggang maging golden brown at super crispy ang balat.
- 4Tirisin muna sa paper towels para tanggal ang sobrang mantika bago i-slice.
- 5Ihain kasama ang sawsawang toyo’t suka na may bawang at sili, at optional na atsara o kanin.
