  • 1 whole pork pata (hind leg, about 1.2 - 1.5 kg)
  • 8 cups water
  • 2 tablespoons asin
  • 5 cloves bawang, crushed
  • 2 dahon ng laurel
  • 1 teaspoon whole paminta
  • Cooking oil for deep frying

How to Make

  1. 1Sa isang malaking kaldero, pakuluan ang pork pata sa asin, bawang, paminta, dahon ng laurel at sapat na tubig hanggang lumambot (about 1-1.5 hours).
  2. 2Patuyuin ang pinakuluang pata. Mas mabuting palamigin o i-air-dry pa ng ilang oras para lalong mas maging crispy ang balat.
  3. 3Mainit na mainit na mantika ang gamitin, saka dahan-dahang ilubog ang pata. Iprito hanggang maging golden brown at super crispy ang balat.
  4. 4Tirisin muna sa paper towels para tanggal ang sobrang mantika bago i-slice.
  5. 5Ihain kasama ang sawsawang toyo’t suka na may bawang at sili, at optional na atsara o kanin.
